I'm trying to get an intuition for Hopf monoids. Does anyone have any good examples in the category of sets under (,) (i.e. "normal" monoid objects that are Hopf monoids)?

No I don't unfortunately. I've been reading a bit more about bimonoids and have a slightly improved understanding of that concept now
